SESAME VEGETABLE COINS

SESAME  VEGETABLE  COINS:
INGREDIENTS:            (makes 12)

6  bread slices, preferably whole (brown) bread
1-1/2  tbsp oil
1  small onion-chopped finely
1  carrot -chopped finely (diced)
1  capsicum-chopped finely (diced)
2  small potatoes-boiled and grated
1  tbsp chopped coriander leaves
1  tsp soya sauce
1  tsp tomato sauce
1/2  tsp pepper
1/4  tsp chilli powder
Salt, to taste
Sesame seeds to sprinkle
Butter- just enough to spread lightly
2  tsp masala chilli sauce or 1 tsp tomato ketchup mixed with
                             1  tsp chilli sauce to serve

METHOD:
  • Heat 1-1/2 tbsp oil.  Add onions. Cook till transparent.
  • Add carrot and capsicum. Cook for 3-4 minutes on low flame.
  • Add potatoes, soya sauce, salt, pepper & chilli powder. Cook for 2-3 minutes. Keep aside.
  • With a cutter or a shaoe lid, cut out small rounds (about 1-1/2-2" diameter) of the bread. Butter the bread rounds very lightly on both sides with softened butter.
  • Heap some potato mixture on the round piece of bread in the centre, leaving 1/4" empty all around, like a mountain. Press.
  • Sprinkle sesame seeds. Press.
  • Grill in a moderately hot oven at 200C till bread turns crisp from the under side.
  • Serve, dotted with masala-chilli sauce.
