BHARWAAN PANEER PAKORE:
INGREDIENTS: (serves 4)
250 g paneer
Some chaat masala to sprinkle
Filling
1/2 tsp carom seeds
1 small onion-grated
1" ginger piece-grated and crushed to a paste
3-4 flakes garlic-crushed
1/2 tsp chilli powder
1/2 tsp garam masala
1/2 tsp salt
1-1/2 tsp ground coriander
1 tsp dry mango powder or powdered pomegranate seeds
1 tsp oil
Batter
1 cup besan ( gram flour)
1/3 cup water-approx.
2 pinches baking powder
3/4 tsp each red chilli powder and salt, or to taste
2 tbsp chopped coriander leaves
METHOD:

1-1/2 tsp ground coriander
1 tsp dry mango powder or powdered pomegranate seeds
1 tsp oil
Batter
1 cup besan ( gram flour)
1/3 cup water-approx.
2 pinches baking powder
3/4 tsp each red chilli powder and salt, or to taste
2 tbsp chopped coriander leaves
METHOD:
- Cut paneer into 1-1/2" squares, keeping them slightly thicker than 1/4 inch.
- Sprinkle some chaat masala on them.
- Slit the pieces of paneer, a little more than halfway but not till the end.
- To prepare the filling, mix grated onion, crushed ginger and garlic. Add all other ingredients.
- With the help of a knife insert some filling in the paneer pieces. press well.
- Prepare a thick batter with all the given ingredients. Beat well and keep aside for 10 minutes.
- Dip the stuffed pieces of paneer in the batter and deep fry in hot oil till golden.
- Serve hot sprinkled with chaat masala.
