CHEESY PANEER BITES:
INGREDIENTS: (serves 4)
1-1/2 tbsp butter
4 slices brown or white bread
1 tsp garlic (5-6 flakes) -crushed and chopped
100 g (25-30) leaves of spinach -washed & shredded
150 g paneer (cottage cheese)-grated
1 tbsp basil or coriander leaves-chopped
5 tbsp mozzarella cheese-grated
1/4 tsp salt and pepper, or to taste
Some red chilli flakes
METHOD:

5 tbsp mozzarella cheese-grated

METHOD:
- Wash and shred the spinach leaves into thin ribbons. Pat dry on a kitchen towel.
- Heat butter in a pan.
- Add garlic and stir. Add the spinach and cook till all the moisture of the spinach evaporates. Remove from heat.
- Mix grated paneer, basil or coriander and 4 tbsp grated mozzarella cheese, leaving behind 1 tbsp for the topping.
- Add cooked spinach to the paneer and mix well. Add salt and pepper.
- Toast the slices and spread the mixture on the toasts. Sprinkle some mozzarella cheese. Sprinkle some red chilli flakes too.
- Grill in the oven (210C) for 2-3 minutes and serve hot cut into triangles or squares.
